🇪🇨 Chocolate from Ecuador
Ecuador is the world's leading producer of fine-aroma cocoa, a premium category in the world of chocolate.
The two varieties you need to know about:
- "Sabor Arriba" cacao, the country's signature variety, has a cacao flavor with floral, fruity, and nutty notes.
- The CCN51 variety is also grown in the country; it has an intense aroma and was developed in the mid-20th century to be more resistant to pests that can affect the cacao tree.
🇵🇪 Chocolate from Peru
Peru is known for having more than half of the world's cocoa varieties, but of all of them, we'd like to highlight two:
- Chuncho cacao (also known as Cusco). An ancient variety, cultivated since the time of the Incas. It has a floral aftertaste and fruity notes of mango and banana.
- The Porcelana variety (also known as Piura or Blanco) has a completely white bean. It is very creamy and has citrus notes in its flavor.
