Chocolate truffles are a sophisticated option both as a gift and as a tasting. Of course, did you know that they were born out of improvisation? The history of the chocolate truffle takes us back to France at the end of the 19th century, when master pastry chef Louis Dufour ran out of ingredients for his traditional desserts and had to improvise.
Dufour made a mixture with the ingredients he had on hand: cream, bitter cocoa and vanilla. He gave the mixture a spherical shape and covered them with cocoa powder. Chocolate truffles were born, whose name relates the shape of this dessert to the shape of the truffle fungus, used in haute cuisine.
What is the difference between a truffle and a bonbon?
Truffle: It consists of a smooth and creamy mixture in the shape of a small sphere, and is usually coated with cocoa powder, melted chocolate or nuts. Its texture is smooth and melts in the mouth.
Bonbon: It usually has a solid chocolate outer shell and can be filled with liqueurs, creams, nuts or other ingredients. The outer texture is harder than that of the truffle.
